
Ask anyone how to store coffee and you will get the same three answers. Airtight container. Room temperature. Away from moisture. Oxygen is the villain in every version of this advice, and it deserves the reputation.
The one that gets left out is light, and it is the reason those beautiful glass jars on the counter are quietly ruining what is inside them. Light drives its own set of chemical reactions in coffee, it works faster than oxygen alone in many cases, and it is the easiest of all the storage problems to fix completely.
Buy fresh and store it properly.
What Light Actually Does to Coffee
Light is energy, and chemical reactions need energy to proceed. When photons hit the compounds in a roasted coffee bean, they can supply enough energy to break bonds and start reactions that would otherwise take much longer or not happen at all.
Two processes dominate.
Photo oxidation. The lipids in coffee, which is to say the oils, are vulnerable to oxidation on their own. Add light and the rate increases substantially, because light energy generates reactive species that attack the fats directly. The products of that reaction are the compounds responsible for rancid flavors, and roasted coffee is between ten and fifteen percent oil by weight, so there is plenty to work with.
Photo degradation of aromatics. Many of the volatile compounds that give coffee its aroma are chemically fragile. Light exposure breaks some of them down into other compounds, and the replacements are rarely improvements. The bright, complex top notes go first, which is the same pattern you see with heat and with age.
Ultraviolet light does the most damage per unit of energy because it carries more of it, but visible light contributes meaningfully as well. This is not only a sunlight problem. Fluorescent tubes, LED shop lighting, and ordinary kitchen lighting all supply energy to these reactions over the hours and days a bag sits under them.

Why the Effect Compounds With Oxygen
Light and oxygen are not independent problems that add up. They multiply.
Oxidation requires oxygen, obviously. Light accelerates the reaction by creating the energetic conditions that make the oxygen far more aggressive. A bean sitting in a sealed opaque bag with a little residual oxygen degrades slowly. The same bean in a clear jar with the same amount of oxygen degrades noticeably faster, because every photon that lands on it is pushing the reaction along.
Heat is the third partner, and clear containers are worse there too. A glass jar in a spot that gets any direct sun heats up considerably more than the air around it, and warm coffee stales faster than cool coffee.
So the decorative glass jar on a sunny counter is running all three degradation pathways at once, which is a lot of damage for a container chosen because it looks nice.
Why Ground Coffee Suffers Far More
Surface area explains almost everything about coffee staling, and it explains this too.
A whole bean has a protective outer structure and a relatively small exposed surface. Most of the oils and aromatics are locked inside cells, away from the air and away from light penetrating more than a fraction of a millimetre.
Grinding multiplies exposed surface enormously and opens every one of those cells. Now the oils are on the outside, spread across a vast area, exposed directly to whatever light and oxygen reach the container.
If you keep pre ground coffee in a clear container, the degradation runs at a pace that makes the whole exercise of buying good coffee pointless. This is the single worst storage arrangement available and it is also, unfortunately, a common one.
Grind fresh from a bag that was sealed properly.

Why Coffee Bags Look the Way They Do
Take a look at a well made coffee bag and you will notice that essentially none of them are transparent.
Most are a laminate with a metallized or foil layer in the middle, sandwiched between plastic layers. That metal layer does three jobs at once. It blocks light completely. It provides an oxygen barrier far better than plastic alone. And it blocks moisture transfer.
The one way valve on the front handles the degassing problem, letting carbon dioxide escape without letting air in, and that gets most of the attention. The light barrier is doing just as much work and gets none.
When you see a window on a coffee bag, it is a marketing decision, made because customers like to see the beans. The best of those bags use a small window and a coloured or coated film that blocks a fair amount of light. The worst are effectively clear.
If you buy a bag with a large clear window, treat the packaging as compromised and move the coffee into something opaque once you get home.
What Good Storage Looks Like
The rules are short.
Opaque, always. Ceramic, stainless steel, or the original foil bag. If you can see the beans without opening the container, light can see them too.
Airtight, with a valve if the coffee is very fresh. A canister with a proper gasket seal. Vacuum sealing canisters exist and help, though the difference between a good gasket and a vacuum is much smaller than the difference between clear glass and opaque steel.
Cool and dark. A cupboard, not a counter. Away from the stove, away from the oven, away from anywhere that gets sun during the day.
The original bag is genuinely fine. Roll it down tightly, clip it, and keep it in a cupboard. A well made coffee bag is a better storage container than most of what you can buy to replace it, since it already has the foil barrier and the valve.
Buy quantities you will finish. Two to three weeks of coffee at a time. No container solves the problem of a bag sitting open for two months.
If You Want Something on the Counter
Plenty of people want their coffee visible and accessible, and there is a reasonable middle ground.
Keep a small working container on the counter, holding two or three days of beans, in something opaque with a decent seal. Keep the main supply sealed in a cupboard. The small amount that is out gets used before light and air have time to do much, and the bulk of the bag stays protected.
If the aesthetic of a glass jar is important to you, put it somewhere genuinely dark, like inside a cupboard, and accept that the jar is now doing nothing except looking nice where nobody sees it. Or use the glass jar for something that does not care, like pasta, and buy a steel canister for the coffee.

How to Tell If Light Has Been Doing Damage
The signature is a flat cup with a rancid edge.
Coffee that has staled mainly from oxygen exposure tastes papery and dull, with the aromatics faded and not much else wrong. Coffee that has taken significant light exposure often carries an additional note that reads as oily, slightly off, or like old nuts. That is lipid oxidation, and the products are unpleasant in a way that plain staleness is not.
Dark roasts show it soonest, because they have more oil migrated to the surface where it can be attacked directly. A dark roast in a clear jar on a windowsill can develop a genuinely rancid character within a couple of weeks.
If you have been storing coffee in glass and have been vaguely unimpressed by beans you thought would be better, this is worth testing. Buy a bag, split it in two, keep half in a dark cupboard in the sealed bag and half in a clear jar on the counter, and taste them against each other after ten days. The difference is not subtle, and it costs nothing to find out.
Start with a fresh bag and keep it in the dark.
