
The genus Coffea contains well over a hundred species. Some estimates put the number past one hundred thirty, scattered across Africa, Madagascar, and parts of Asia, and botanists keep finding more.
Two of them account for essentially all the coffee anyone drinks. Arabica makes up roughly sixty percent of world production, robusta most of the remainder, and everything else combined occupies a sliver so thin it rounds to nothing in the trade statistics.
That sliver is mostly one species, and it has a genuinely strange history. It was once positioned as coffee's future, planted across Southeast Asia with real enthusiasm, and then almost entirely abandoned. It is called liberica, and lately people have started paying attention to it again for reasons that have nothing to do with flavor.
Stick with a coffee you know you love.
What Liberica Is
Coffea liberica comes from West and Central Africa, and the first thing worth knowing is that it does not look like the coffee you are used to.
The plant is a tree rather than a shrub. Left alone it reaches fifteen to twenty meters, which is enormous compared to an arabica bush that gets pruned to a couple of meters so pickers can reach the fruit. The leaves are correspondingly large, sometimes the size of a hand.
The beans are unmistakable. Bigger than arabica, often noticeably asymmetric, with a distinctive hooked or crooked shape that makes a handful of liberica look almost like a different crop. The cherry is larger too, with thicker, tougher pulp.
Every one of those features is a production problem, which turns out to be most of the story.

The Moment It Almost Took Over
In the late nineteenth century, coffee leaf rust swept through Asia's coffee growing regions and devastated arabica plantations across Ceylon, Java, and the Philippines. Entire industries collapsed within a few seasons.
Growers needed something that could survive, and liberica looked like the answer. It tolerated heat and lower altitudes, it showed better resistance to the rust that was killing everything else, and it produced large cherries on large trees.
So it got planted, substantially. The Philippines built an industry on it and became a significant coffee exporter, and Barako, the strong traditional coffee of the Batangas region, is liberica. Indonesian growers planted it too. For a period it genuinely looked like liberica might inherit a large share of world production.
Then two things happened. Leaf rust adapted and began affecting liberica as well, removing its main advantage. And robusta arrived, which offered similar hardiness with dramatically better economics: smaller plants, higher yield per hectare, easier harvesting, and processing that fit existing equipment.
Liberica lost, and it lost decisively. It survives today mainly in the Philippines, in Malaysia, in pockets of Indonesia and Vietnam, and in parts of West Africa, mostly for domestic consumption and mostly on old trees.
What It Tastes Like, Honestly
Liberica divides people, and the descriptions are all over the map, partly because much of what exists is processed with less care than a specialty arabica would get.
The consistent notes: low acidity, heavy body, and an aroma that people describe as woody, smoky, and floral all at once. There is often a specific fruit character that gets compared to jackfruit or overripe tropical fruit. A savory quality shows up in a lot of descriptions, sometimes read as nutty, sometimes as something closer to a dark spice.
Historical accounts from the era when it was widely traded were less generous. Buyers found it harsh, and its reputation for producing a coarse cup contributed to how quickly it was dropped once alternatives existed.
The fairest thing to say is that liberica is a different beverage rather than a worse version of the same one. Judged against arabica's yardstick of clean acidity and layered sweetness, it does poorly, because it is not doing that. Judged on its own terms it is distinctive, and a well processed specialty liberica, of which very few exist, can be genuinely compelling.
Excelsa, Which Is Not Quite Its Own Species
Excelsa gets described as a separate species, and this is one of those pieces of coffee lore that has been overtaken by the botany.
Excelsa was originally classified as Coffea excelsa, and it is now generally treated as a variety of liberica, sometimes written as Coffea liberica var. dewevrei. So when someone tells you there are four commercially important coffee species, that fourth one is really a variety of the third.
It grows in South Sudan, Chad, the Central African Republic, and in smaller quantities in Vietnam and the Philippines. Total production is tiny, well under one percent of world output.
The flavor profile is different from standard liberica and, to most palates, more approachable. Excelsa tends toward tart, dark fruit, with more acidity than liberica and a lighter body, sometimes described as sitting somewhere between arabica and robusta in character. Caffeine content is generally lower than robusta. It has historically been used in small proportions in blends to add complexity and a particular tartness.
Excelsa has a modest cult following among people who seek out unusual coffee, and the small amount that reaches specialty markets tends to sell quickly on curiosity alone.

Why You Cannot Buy It Anywhere
The absence of liberica from shelves is not a mystery of taste. It is a stack of practical obstacles, each of which would be surmountable and which together are not.
Yield economics. A twenty meter tree occupying the footprint of several arabica bushes does not produce proportionally more sellable coffee. Yield per hectare is poor, and land is the limiting resource.
Harvesting cost. You cannot pick a fifteen meter tree by walking along a row. Harvesting requires ladders, or letting fruit fall, or aggressive pruning regimes that take years to establish. Labor per kilogram is high.
Processing mismatch. Liberica cherry is larger with thicker, tougher pulp. Pulpers are built and calibrated for arabica cherry dimensions, so standard equipment either fails to pulp it or damages the seed. Drying takes longer because of the pulp volume. A mill set up for arabica cannot simply run a liberica lot through.
Milling and grading mismatch. Screen sizes, density tables, and optical sorter presets are all configured around arabica bean geometry. Liberica's large, irregular, hooked beans do not fit those parameters, so grading standards have to be reinvented.
No roasting knowledge base. Roasters have decades of accumulated understanding of how arabica behaves. Liberica has different density, moisture behavior, and sugar composition, and it needs different profiles. Most roasters have never had enough of it to learn, and learning on a small expensive lot is a poor bet.
No evaluation framework. The cupping protocol and scoring system that specialty coffee runs on were developed around arabica. Scoring liberica against those descriptors penalizes it for being itself. Without a scoring language, there is no basis for premium pricing, and without premium pricing there is no reason for a producer to invest in quality.
No supply chain and no demand. Importers do not stock it because roasters do not order it, roasters do not order it because customers do not ask, and customers do not ask because they have never tasted it. That loop is self sustaining and has been for a century.
Why Researchers Are Interested Again
The renewed attention has essentially nothing to do with flavor and everything to do with temperature.
Arabica is a fussy plant with a narrow comfort zone, roughly eighteen to twenty two degrees Celsius, and it prefers altitude and cool nights. Climate projections for the coffee growing belt are not kind to those requirements, and multiple studies have concluded that a large share of currently suitable arabica land will become unsuitable over the coming decades. Farmers can move uphill, until they run out of hill.
Liberica sits in a different niche. It tolerates higher temperatures, grows well at low elevation, handles a wider range of rainfall patterns, and shows resistance to nematodes and to some coffee diseases. Researchers at Kew have highlighted it, alongside the rediscovered Coffea stenophylla, as a species worth serious agronomic investment specifically because of climate resilience.
Interest is also coming from the specialty side, in small amounts, and from a familiar direction. Producers in the Philippines and Malaysia have started applying modern processing to liberica, treating it with the care usually reserved for high value arabica: selective picking, controlled fermentation, careful drying on raised beds. Early results suggest a lot of liberica's historically bad reputation was actually a processing problem rather than a species problem, which is exactly what happened with robusta over the last decade.
That is the interesting possibility. Not that liberica replaces arabica, but that a species written off as coarse turns out to have been mostly mishandled.
If You Ever Get the Chance to Try It
A few practical notes, because the most common outcome of a first liberica is disappointment caused by wrong expectations.
Do not brew it expecting arabica. Set aside your assumptions about acidity and sweetness and taste it as its own thing, the way you would approach an unfamiliar tea.
Immersion methods tend to suit it. Because acidity is low and body is high, a French press or a long steep plays to its strengths, and there is less risk of the thin, sour result that a hurried pour over can give.
Its low acidity also means it tolerates longer extraction than you might expect, so a slightly coarser grind with a longer contact time is a reasonable starting point.
And taste it black at least once. Liberica's character is unusual enough that milk obscures the entire point.

The Short Version
Liberica is a real coffee species with a real history, briefly positioned as arabica's successor when leaf rust wrecked Asian plantations, then abandoned once robusta proved easier and cheaper to grow. Excelsa is a variety of it, tarter and lighter, produced in tiny volumes.
Neither is on your shelf because the entire global apparatus of coffee, from pulpers to screen sizes to cupping forms, is built around arabica dimensions and arabica flavor. That is a formidable amount of infrastructure to work against.
Whether that stays true depends less on how liberica tastes than on how hot the growing regions get. For now it is a curiosity worth trying once, and a reminder that of the hundred and some coffee species out there, we have made a serious commitment to two.
