
Most pour over guidance ends at total brew time. Aim for three minutes, or three and a half, or whatever number the recipe specifies. Hit the number, you did it right.
That is only partly true. Total time is an outcome, not a control, and two brews that both finish at three minutes can be completely different in what happened along the way. The more useful thing to watch is the drawdown, the stretch after your final pour when the water level falls and the bed drains. How that phase behaves tells you about your grind, your technique, and your coffee in ways a stopwatch reading never will.

What Drawdown Actually Is
During a pour over, you are alternating between adding water and letting it pass through. The drawdown proper is the final drain, from the moment you stop pouring until the bed goes dry and dripping slows to nothing.
During that window, water is percolating through a packed bed of coffee under nothing but gravity. The rate it moves depends on how permeable the bed is, and permeability depends on particle size, particle size distribution, how the bed is arranged, and how much fine material has migrated into the pores between larger particles.
That last factor is the interesting one. Fines move during brewing. Water carries them downward and they lodge in the gaps, progressively clogging the bed. A brew that starts free flowing can choke partway through as migration accumulates.
So drawdown is a live readout of bed condition. It reflects what your grinder produced and what your pouring did to it.

Reading a Slow Drawdown
If the bed is still draining well past where you expect, several things could be happening, and they call for different responses.
Too fine a grind is the obvious one. Smaller particles pack tighter and leave smaller channels for water. If your drawdown has stretched out and your cup tastes bitter, dry, and astringent, you have gone too fine and the coffee is over extracting during the extended contact.
Excessive fines from a dull or low quality grinder is the sneakier version. Your average particle size might be fine, but the dust in the distribution is clogging the bed anyway. The tell is that the cup tastes both bitter and thin, which is the signature of simultaneous over and under extraction across different particle sizes. Grinding coarser helps a little but does not really solve it, because coarsening also enlarges the boulders.
Agitation is the one people miss. Pouring aggressively, stirring vigorously, or swirling hard drives fines downward and compacts the bed. You can take a perfectly good grind and make it drain like sludge purely through technique. If your drawdown time varies wildly brew to brew with the same setting, your pouring is inconsistent.
Filter and brewer geometry contribute too. A thick paper slows flow. A flat bottom brewer with small holes restricts differently than a cone. Some brewers seal against wet paper and create suction that stalls the drain entirely.
Reading a Fast Drawdown
The opposite problem is just as informative.
Too coarse a grind lets water rush through without adequate contact. The cup comes out sour, weak, and watery. You will also often see the bed left flat and evenly wet rather than showing the gentle crater a good brew leaves.
Channeling produces a fast drawdown with a distinctive tell. Water found a low resistance path, ran through it, and left much of the bed barely touched. Look at the spent grounds. If there are visible holes, gullies, or a section that looks drier than the rest, water bypassed that coffee entirely. The cup is under extracted regardless of how long the timer said.
Very fresh coffee can drain fast for its own reason. Carbon dioxide escaping during brewing pushes back against incoming water and disrupts the bed, creating gaps. This is why the bloom exists and why a coffee three days off roast behaves differently than the same coffee at day twelve.
An uneven bed causes it too. If your grounds are sitting higher on one side, water takes the shorter path through the shallow section.

What the Spent Bed Shows You
After every brew, spend three seconds looking at the grounds before you dump them. It is the cheapest feedback available.
A good bed is flat to gently concave, evenly saturated, with a slight ring of grounds up the filter wall. No craters, no dry patches, no volcano peak in the middle.
A deep crater in the center means your pour was too concentrated in one spot and you excavated the middle. High walls of dry grounds up the sides mean coffee never got wet and contributed nothing. That coffee was dead weight in your dose, and your effective ratio was weaker than you calculated.
Visible holes or tunnels are channeling made plain. A perfectly smooth, glassy surface can indicate over compaction and excessive fines.
Also press a finger into the bed. It should feel like wet sand, uniformly damp. Pockets of dry grounds underneath mean saturation was incomplete.
Why the Coffee Itself Changes Drawdown
Bean characteristics affect drainage more than most people account for, which is why a setting that worked for last month's bag can be wrong for this one.
Density matters. High grown dense beans fracture into more uniform, more angular particles that build a stable, permeable bed. Softer lower grown beans crumble into more irregular shapes and more fines, packing tighter.
Roast level matters more. Dark roasts are structurally fragile, having lost much of their cellular integrity to heat. They shatter under the burr and generate far more fines, so they drain slower and are more prone to clogging. Light roasts are harder and grind more uniformly, draining faster at the same nominal setting.
Age matters. Fresh coffee's degassing disrupts the bed. Older coffee, having lost its gas, forms a more settled and more restrictive bed.
Roast uniformity is the one that quietly wrecks consistency. A batch containing beans developed to different degrees is a batch of mixed hardness, and mixed hardness grinds to mixed particle sizes. That produces unpredictable drawdown because the fines fraction varies from dose to dose. Drum roasting heats beans partly through contact with hot metal, developing surfaces ahead of centers and widening that variation. Air roasting suspends beans in a hot air stream so they heat evenly from all sides, with chaff carried out before it can scorch. A uniform batch grinds uniformly, and a uniform grind drains predictably.
Predictable drawdown is what lets you actually learn from it. If your drainage is random, it carries no information.

Using Drawdown as a Control
Once you are watching it, you can use it deliberately.
Pick a target range for your setup. For a typical cone brewer with a twenty to twenty five gram dose, a drawdown finishing somewhere around forty five seconds to a minute and a half after the last pour is a reasonable zone, though this varies enormously by brewer and by preference. What matters more than the exact number is that yours is repeatable.
Then adjust grind against drawdown rather than against total time. If drawdown is stretching and the cup is harsh, go coarser. If it is racing and the cup is sour, go finer. You are tuning bed permeability directly, which is the actual physical variable, instead of tuning a number that aggregates several variables at once.
Keep your pouring consistent so drawdown reflects the grind rather than your hand. Same pour height, same flow rate, same number of pours, same agitation. Once technique is stable, drawdown becomes a clean signal.
And pay attention to how it drifts over the life of a bag. As coffee degasses across two or three weeks, drawdown will typically slow slightly. That is the coffee telling you it has changed and your grind should move with it.
Total brew time will still be roughly what it always was. But you will know why, and you will know what to move when it is not.
