
Watch enough coffee videos and you will see someone raise the kettle a foot above the cone and pour a long thin ribbon of water into the coffee. It looks theatrical. It looks like something invented for a camera.
It is doing real work. Pouring height changes the speed of the water when it lands, which changes how much the bed gets disturbed, which changes extraction. It also changes the temperature of the water by the time it reaches the coffee. Both effects are measurable and both are things you can use once you know which direction they push.
Brew a coffee that responds to small adjustments.
Height Is Really About Impact Speed
Water falling from a kettle accelerates on the way down. The higher the spout, the faster the water is traveling when it hits the coffee bed, and the more kinetic energy it delivers.
That energy does one thing above all others. It agitates. It stirs the grounds, pushes them around, and mixes the water through the bed rather than letting it trickle past settled particles.
Agitation increases extraction. More of the coffee's soluble material dissolves, more consistently across the dose, because more of the grounds are actually in contact with moving water. Coffee that has compacted into a still layer with water flowing around it is not contributing, and stirring it back into circulation recovers it.
So a higher pour is a more extractive pour, all else equal. A lower pour is gentler and pulls less.

When You Want More Agitation
There are specific situations where reaching for height is the right move.
A light roast is dense and gives up its solubles reluctantly. Brewing one at a low gentle pour often produces something sour and thin, because the extraction never got far enough. Raising the pour height adds energy and helps close that gap without going any finer on the grind.
A coarse grind has less surface area and extracts slowly by nature. Higher pours partly compensate.
A bed that has channeled, meaning water has found a fast path through and is bypassing part of the coffee, benefits from agitation that breaks up that path and redistributes the grounds.
And the bloom is almost always worth pouring with some height and intent. You are trying to wet every particle in the dose quickly and evenly, and a gentle pour leaves dry pockets that never fully catch up. A vigorous bloom pour followed by a gentle swirl is one of the highest return habits in pour over.
When You Want Less
The opposite case is just as common.
A dark roast is brittle and extracts fast. Aggressive pouring on top of that produces bitterness and astringency, since you are pulling hard on a coffee that gives everything up quickly. Lower the kettle and pour gently.
A fine grind already has enormous surface area, and heavy agitation pushes it into overextraction while also stirring fines into suspension where they slow the drawdown and add harshness.
A delicate washed coffee with fragile floral character is often better with a softer touch, since heavy agitation tends to flatten the top notes and bring more of the bittering compounds forward.
And if your brews are consistently running long, agitation is part of the reason. Stirring the bed migrates fine particles downward where they clog the filter, and the drawdown stretches. Pouring lower keeps the bed more stable.

Heat Loss on the Way Down
The second effect of height is temperature, and it runs against the first.
Water leaving the kettle at ninety six degrees Celsius does not arrive at the coffee at ninety six. It loses heat to the air during the fall, and it loses more the longer the fall takes and the thinner the stream is.
A thin stream from a significant height can drop a few degrees before it lands. The exact number depends on ambient temperature, stream thickness, and distance, but it is not negligible, and it stacks with the heat the water loses to the cold brewer, the cold filter, and the cold coffee itself.
Lower water temperature means slower extraction, which pushes in the opposite direction from the agitation you gained. In practice the agitation effect usually wins for most brews, but if you are brewing a very light roast that needs all the heat you can give it, pouring from a great height can cost you more in temperature than it gains you in turbulence.
This is also why preheating the brewer and rinsing the filter with hot water matter more than people expect. Every degree lost before the water reaches the coffee is a degree of extraction you have to make up somewhere else.
Stream Thickness Interacts With All of It
Height is one variable and flow rate is the other, and they are easy to confuse.
A thick heavy stream poured from low down delivers a lot of energy through sheer volume. A thin stream poured from high delivers energy through speed. They are not equivalent, because the thick stream also raises the water level in the cone faster, which increases the pressure driving flow through the bed, while the thin stream keeps the level lower and the flow gentler.
Gooseneck kettles exist because they let you control stream thickness precisely and independently of how much you tip. That control is what makes height a usable variable at all. Pouring from a wide spouted kettle at height mostly produces a mess and a crater in the middle of your bed.
The two also interact with the water level in the cone. A fast thick pour builds a deep pool above the bed, and that pool pushes water through under its own weight long after you have stopped pouring. A slow thin pour keeps the level low and lets the bed set the pace instead. So the same total volume delivered two different ways gives you two different flow rates through the coffee, and that is before you account for any agitation at all.

A Practical Way to Use It
Rather than committing to one height, vary it through the brew.
Pour the bloom from a moderate height with enough energy to saturate everything, then swirl the brewer gently to catch anything the pour missed.
Pour the first main addition from a similar height, since this is where most of the extraction gets established and even distribution matters most.
Lower the kettle progressively through the later pours. By the last addition the bed has already given up most of what it will, the fines have migrated, and gentle is better than aggressive. Pouring hard at the end is a reliable way to add bitterness to a brew that was otherwise going well.
Keep the stream inside the bed and off the paper regardless of height. Water running down the filter wall bypasses the coffee entirely, and that loss is larger than any height adjustment you could make to compensate.
Then taste and adjust. Sour and thin means you need more, so pour higher or with more agitation. Harsh and drying means you need less, so pour lower and softer. Change one thing at a time and keep everything else fixed, or you will not know what did the work.
Pouring height is a small lever and small levers are what dialing in is made of. It is worth knowing which direction it pushes before you spend money on another grinder.
